I was talking with my best friend Jennifer last week (if you live in Jacksonville you need to be taking her dance class!!) and she asked if the weekly meal plans I’ve been sharing on Instagram were located on my blog so that she could refer back to them more often. If you’re not familiar, here’s what she is talking about.
It got me thinking that there might be a few more of you who feel the same way so I’ve decided to start adding the weekly menus right here on the blog. That way all the recipes will be in one place and you can click through to view the ingredients and directions with ease. I plan out our meals before I head to the grocery store every week anyway so I’m happy to share them here too if you guys find it helpful. 🙂
As a reminder, I’m doing #JanuaryWhole30 so for the month of January all of my meals will be Whole30 compliant. Even if you’re not following the program, I still think you’ll enjoy most of these recipes. Here’s what I’m planning for this next week:
Monday
Breakfast: Sausage, Leek and Spinach Quiche (I’m going to adapt this recipe and make it into egg muffin cups since they are easier to grab and go in the mornings. Will also have a small serving of fruit to go with them and probably a little avocado too.)
Lunch: Salad with veggies and topped with my Easy Chicken Salad
Dinner: Chicken Fried Cauliflower Rice
Tuesday
Breakfast: Sausage, Leek and Spinach Quiche
Lunch: Salad with veggies and topped with my Easy Chicken Salad
Dinner: One Pan Shrimp Fajita Bowl

Dinner: Buffalo Chicken Stuffed Bell Peppers
Thursday
Breakfast: Sausage, Leek and Spinach Quiche
Lunch: Leftover chicken sausage and roasted veggies
Dinner: BBQ Chicken and Roasted Sweet Potato Bowls (be sure to use a Whole30 compliant BBQ sauce like this one)

Lunch: Everything but the kitchen sink salad (whatever veggies and protein I have leftover) using my Oxo Salad Chopper
