Since lots of my friends and family have kiddos going back-to-school this week, I thought I’d share some easy weeknight recipes that are all healthy and easy to whip together. I have made all of these dishes numerous times and they continue to be favorites that are well-loved by our whole family!
1. Chicken Fried Cauliflower Rice
2. Burrito Bowls: You can build these however you’d like but my go-to combo includes:
- Grass-fed organic ground beef
- Mexican cauliflower rice (just sauté cauliflower rice with some of your favorite salsa)
- Chopped fresh organic spinach
- Diced avocado
- Go Raw spicy pumpkin seeds
- Mateo’s salsa
- Drizzle of Tessame’s habanero ranch
3. Zoodles with Ground Turkey & Marinara
- Spiralize organic zucchini – if you don’t have a spiralizer you should get one! Do not pay $7 for pre-spiraled zucchini when you can quickly make your own for way less + will be fresher and all around tastier. This is the one I have.
- I usually spiral 1 zucchini per person. Sauté in a little olive oil until tender but not mushy (I drain the excess water after sautéing)
- Brown 1 lb organic ground turkey or grass-fed beef
- Pour in a jar of Rao’s Marinara. That’s it!

5. Chicken Teriyaki with Roasted Broccoli and Coconut Cauliflower Rice
6. Chicken Sausage Sheet Pan Dinners
- Cut the Aidells’ Chicken Apple Sausage into 1” rounds.
- Add your choice of veggies. Pictured here is one 12 oz package of pre-cut butternut squash and one 10 oz package of shredded Brussel Sprouts.
- Drizzle avocado oil over chicken sausage and veggies and add your favorite seasonings. I usually do a combo of garlic powder, onion powder, oregano, cinnamon, turmeric and sage. Add Himalayan pink salt and pepper to taste.
- Roast in the oven at 400 degrees for about 25 minutes or until squash are tender and Brussels sprouts are crispy.
- Omit sugar in spice mixture to keep it Whole30
- I have made this recipe A LOT and am always making it different ways
- It’s great with egg whites if you want a lightened up version
- Instead of ground beef, you could do ground turkey or ground chicken
- If you want to up the veggies, try adding some diced zucchini and chopped spinach
8. Shrimp Lettuce Wrap Tacos (can use chicken or any other meat)
- Toss peeled and deveined shrimp in a little avocado oil and taco seasoning (I make my own using garlic powder, onion powder, cumin, paprika, chili powder, oregano, Himalayan pink salt and pepper)
- Cook taco seasoning-coated shrimp in a skillet on medium-high heat until cooked through
- Serve in lettuce cups (I like this kind) with veggies of choice. You could do sautéed bell pepper, shredded cabbage, avocado or I also like them with a mango/avocado salsa like this one.
9. Whole30 Chicken Pot Pie Soup
Pureed cauliflower is what makes this soup thick and creamy. Tons of veggies and tastes just like chicken pot pie filling!
