It’s no secret that I love all things FALL! Especially comforting, hearty dishes that feature warm spices and seasonal ingredients like squash, pumpkin and apples. Here are 5 fall dinner recipes I want to try this season:
- Chipotle Butternut Squash Bisque – I had this soup at Citrus and Salt when we were in Boston last week and it was unbelievable. Here’s a recipe that looks similar and I’ll use as a point of reference this week when I try to recreate at home. Will let you know how it turns out!
- Pumpkin Meatballs with Cinnamon Sage Tomato Sauce – yum! This sounds so good. I will leave out the brown sugar in the meatballs and will serve over roasted spaghetti squash.
- Beef Enchilada Stuffed Acorn Squash – My friend Kyla made this a few weeks ago and said it was delicious. I’m not surprised as everything the Define Dish creates is always a winner in my book… speaking of book, her new Whole30 cookbook is on my Christmas wishlist!
- Slow Cooker Pork Tenderloin with Apples + Brussels Sprouts – This just screams fall to me!
- Cranberry Rosemary One Pan Chicken – this dish looks tasty, healthy and beautiful! I’ll serve it with mashed cauliflower and roasted green beans.
