We are officially on month FOUR of the kitchen renovation and I’m finally seeing an end in sight! Our cabinets were installed this week so hopefully in another month or so, I’ll be back to whipping up my favorite recipes. I also have a loooonnnngggg list of new recipes I’m anxious to try. With autumn on the horizon, the timing couldn’t be better because there’s nothing cozier than a simmering pot of soup or a roast chicken in the oven on a crisp fall day. Here’s some of the things I’m planning to make right away once the kitchen is complete:
- Stuffed Pork Tenderloin – This recipe sounds intimidating but according to the writer it’s “easy” so I’m going to give it a shot!
- Peruvian-Inspired Whole Roasted Chicken with Tangy “Green Sauce” – We have our fair share of roasted chicken around this time of year so I thought this take on the classic could be a fun way to spice it up!
- Stuffed Acorn Squash – Stuffed peppers are a favorite dinnertime staple so I definitely wanted to try this more autumnal version out.
- Chicken Gnocchi Soup – According to the recipe, this is the soup version of Marry Me Chicken and with a description like that I am in!
- Butternut Squash Pasta with Chili Oil, Feta & Mint – I wanted to throw a lighter recipe in the mix for those days when you’re not in the mood for something heavy. I would use Jovial’s grain free pasta for this!
