Coconut Flour Strawberry Muffins

Ingredients
  • 6 eggs
  • ½ cup coconut flour
  • ½ cup coconut oil (melted, then measured)
  • 3 tbsp coconut sugar
  • 2 tbsp ground flax seed
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp apple cider vinegar
  • 5 tbsp coconut milk
  • 1 cup diced strawberries - about 5
Instructions
  1. Preheat oven to 400 degrees. Spray a muffin pan with cooking spray, or line with cupcake liners, and set aside.
  2. In a stand mixer, beat together all wet ingredients until smooth.
  3. In a separate bowl, mix together the flour, coconut sugar, baking powder, baking soda, flax seed and salt.
  4. Pour the dry ingredients into the stand mixer with the wet, and combine until ingredients are fully incorporated (do not over mix).
  5. Add diced strawberries to the batter and stir well.
  6. Spoon the batter into the muffin pan and bake for about 15 minutes or until golden brown.
