Chicken Fried Cauliflower Rice

Ingredients
  • 1 bag organic riced cauliflower
  • 1 bag organic broccoli florets
  • 1 cup organic shredded carrots
  • ½ cup diced green onions
  • 2 organic eggs
  • 1 cup cooked + diced organic chicken
  • ¼ cup coconut aminos
  • 2 tbsp organic coconut oil
  • 2 garlic cloves, minced
  • Himalayan pink salt + pepper to taste
Instructions
  1. In a large pan, cook the carrots in coconut oil until soft. About 5-7 minutes.
  2. Season with salt and garlic as it's cooking.
  3. Once the carrots are tender, add the cauliflower chopped broccoli, chicken and coconut aminos.
  4. Stir to evenly coat the cauliflower and cook for about 5 minutes.
  5. Push the mixture to the sides of the pan and make a well in the middle. Crack the two eggs and stir until cooked, then mix in.
  6. Add the green onion, salt and pepper to taste, take off the heat, and serve.
