- 1 (7 oz) bag of organic arugula
- 1 navel orange (cut into supremes)
- 1 grapefruit (cut into supremes)
- ½ cup thinly sliced radish
- ½ seedless cucumber, thinly sliced
- ¼ cup thinly sliced green onion
- ¼ cup sprouted sunflower seeds
- 1 large avocado
- 2 tbsp. extra-virgin olive oil
- 2 tbsp. lemon juice
- Himalayan pink salt & pepper to taste
- In a large bowl, toss together the arugula, orange supremes, grapefruit supremes, radish, cucumber and green onion.
- Before serving, top with avocado, sunflower seeds, protein of choice.
- Dress with olive oil, lemon juice (or lemon vinaigrette like this or this) and salt and pepper.
