Floridian Salad

Ingredients
  • 1 (7 oz) bag of organic arugula
  • 1 navel orange (cut into supremes)
  • 1 grapefruit (cut into supremes)
  • ½ cup thinly sliced radish
  • ½ seedless cucumber, thinly sliced
  • ¼ cup thinly sliced green onion
  • ¼ cup sprouted sunflower seeds
  • 1 large avocado
  • 2 tbsp. extra-virgin olive oil
  • 2 tbsp. lemon juice
  • Himalayan pink salt & pepper to taste
Instructions
  1. In a large bowl, toss together the arugula, orange supremes, grapefruit supremes, radish, cucumber and green onion.
  2. Before serving, top with avocado, sunflower seeds, protein of choice.
  3. Dress with olive oil, lemon juice (or lemon vinaigrette like this or this) and salt and pepper.
