Nut Free Paleo Apple Crisp

Ingredients
Apple Filling
  • 6 apples of choice, peeled, cored and sliced (I like Honeycrisp)
  • 1 tbsp coconut oil, melted
  • 1 tbsp maple syrup
  • 1 tbsp cinnamon
Crumble Topping
Instructions
  1. Pre-heat oven to 350.
  2. Toss together the chopped apples, melted coconut oil, maple syrup and cinnamon until coated well. Pour into baking dish.
  3. Place seeds and shredded coconut in a food processor and pulse until a crumble texture forms.
  4. Add coconut oil and maple syrup to processor and pulse a few more times.
  5. Distribute crumble mixture evenly and generously over apples.
  6. Bake at 350°F for 30-40 minutes or until the apples are soft and the topping is golden brown. Allow to cool for about 5-10 minutes.
  7. I topped mine with this coconut vanilla ice cream and it was delicious!
