Pizza Frittata {Gluten Free, Dairy Free}

Ingredients
  • 6 eggs
  • 6 egg whites
  • ½ cup pizza sauce
  • 1 cup Violife dairy free mozzarella cheese
  • 20 turkey pepperoni slices (more if you like)
  • ½ bell pepper (any color), thinly sliced
  • ½ tsp each: salt, pepper, dried oregano
  • pinch of red pepper flakes
Instructions
  1. Preheat oven to 350°F. Generously grease a pie or casserole dish with coconut oil or olive oil.
  2. Whisk together the eggs, egg whites, mozzarella cheese, pizza sauce, salt, pepper, oregano & pinch of red pepper flakes.
  3. Evenly distribute the pepperoni slices across the bottom of the pan.
  4. Pour the egg mixture over the pepperoni then lay the thinly sliced bell pepper on top.
  5. Bake at 350 for 25 to 30 minutes or until the eggs are set.
  6. Slice the frittata into 8 pieces & serve with a side of leftover pizza sauce for dipping.
