Coconut Flour Strawberry Muffins

Serves: 12 muffins
Ingredients
- 6 eggs
- ½ cup coconut flour
- ½ cup coconut oil (melted, then measured)
- 3 tbsp coconut sugar
- 2 tbsp ground flax seed
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ½ tsp apple cider vinegar
- 5 tbsp coconut milk
- 1 cup diced strawberries - about 5
Instructions
- Preheat oven to 400 degrees. Spray a muffin pan with cooking spray, or line with cupcake liners, and set aside.
- In a stand mixer, beat together all wet ingredients until smooth.
- In a separate bowl, mix together the flour, coconut sugar, baking powder, baking soda, flax seed and salt.
- Pour the dry ingredients into the stand mixer with the wet, and combine until ingredients are fully incorporated (do not over mix).
- Add diced strawberries to the batter and stir well.
- Spoon the batter into the muffin pan and bake for about 15 minutes or until golden brown.
