Chicken Fried Cauliflower Rice

Ingredients
- 1 bag organic riced cauliflower
- 1 bag organic broccoli florets
- 1 cup organic shredded carrots
- ½ cup diced green onions
- 2 organic eggs
- 1 cup cooked + diced organic chicken
- ¼ cup coconut aminos
- 2 tbsp organic coconut oil
- 2 garlic cloves, minced
- Himalayan pink salt + pepper to taste
Instructions
- In a large pan, cook the carrots in coconut oil until soft. About 5-7 minutes.
- Season with salt and garlic as it's cooking.
- Once the carrots are tender, add the cauliflower chopped broccoli, chicken and coconut aminos.
- Stir to evenly coat the cauliflower and cook for about 5 minutes.
- Push the mixture to the sides of the pan and make a well in the middle. Crack the two eggs and stir until cooked, then mix in.
- Add the green onion, salt and pepper to taste, take off the heat, and serve.
