Meet my new favorite summertime activity: making homemade popsicles! I’m not sure what took me so long to invest in a popsicle mold, but I’m so glad I finally did. A few weeks ago I ordered this popsicle maker and have been having so much fun trying out different healthy popsicle combos. Sharing one of my favorites with you today: Paleo Peach!

The coconut yogurt and milk give them a super creamy texture and they’re perfectly kissed with the right amount of refreshing sweetness from the ripe peaches. If you don’t have a popsicle mold, I highly recommend this one I found on Amazon. In addition to being made of non-toxic silicone, it’s also budget friendly, gives the popsicles a cute retro style look, comes with wooden sticks and bags for storing, and the best part is the popsicles are easy to remove once frozen. Simply leave the mold on the counter a few minutes and the popsicles will slide out with easy.
I made a batch of these to have at the beach with us over this 4th of July weekend and every time I go to eat one I hear Darla from The Little Rascals in my head, “He makes me melt like a popsicle on the 4th of July.” Ha! Maybe we’ll have to watch that movie tonight. 🙂

- 1 (13.5 oz) can full fat coconut milk
- 1 cup coconut yogurt
- 2 cups ripe peaches
- 1 tbsp fresh lemon juice
- 2 scoops Primal Kitchen Vanilla Collagen Fuel
- *2 tbsp pure maple syrup (optional)
- Place all ingredients into a high-powered blender (I used my Vitamix) and blend until smooth. *Option to add 2 tbsp pure maple syrup. I did not and found them to be plenty sweet without.
- Pour into popsicle mold, insert wooden sticks and place into freezer for about 4-6 hours or overnight.
- Once popsicles are completely frozen, remove from freezer and enjoy!
