In addition to my affinity for chicken salad, I also have a special place in my heart for egg salad. It’s a super-easy, classic lunch or snack that reminds me of summers in the South. My family loves this recipe so much I make it almost weekly once the weather is warm. It keeps well in the refrigerator and you can double or even triple the recipe for a crowd.
Classic Egg Salad

Ingredients
- 8 hardboiled eggs, finely chopped
- ½ cup mayo
- 1 tsp dijon mustard
- ¼ cup chopped green onion
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ½ tsp dried dill
- salt + pepper to taste
Instructions
- Place all ingredients in a bowl and stir.
- Taste to adjust creaminess and seasoning with more mayo or salt and pepper.
- Refrigerate at least 2 hours before serving.
