Ingredients
- 6 eggs
- 6 egg whites
- ½ cup pizza sauce
- 1 cup Violife dairy free mozzarella cheese
- 20 turkey pepperoni slices (more if you like)
- ½ bell pepper (any color), thinly sliced
- ½ tsp each: salt, pepper, dried oregano
- pinch of red pepper flakes
Instructions
- Preheat oven to 350°F. Generously grease a pie or casserole dish with coconut oil or olive oil.
- Whisk together the eggs, egg whites, mozzarella cheese, pizza sauce, salt, pepper, oregano & pinch of red pepper flakes.
- Evenly distribute the pepperoni slices across the bottom of the pan.
- Pour the egg mixture over the pepperoni then lay the thinly sliced bell pepper on top.
- Bake at 350 for 25 to 30 minutes or until the eggs are set.
- Slice the frittata into 8 pieces & serve with a side of leftover pizza sauce for dipping.
